Chicken Mini Roasts with Mushroom and Garlic Gravy

- 4-6 boneless, skinless, chicken thighs
- pre-made roast chicken stuffing
- mixed herbs
- roast chicken seasoning
- 60g of mushrooms
- chicken flavored gravy powder
- 1/2 a teaspoon of minced garlic
Method
- Using the cut and space in the thigh left by the absense of bone, fill the chicken with stuffing.
- Hold the chicken thigh closed with toothpicks.
- Place stuff chicken thigh, cut side down, on a baking paper covered oven tray. Season with mixed herbs and roast chicken seasoning.
- Place chicken in the oven for 30 minutes or until cooked.
- Roughly 5 minutes before serving time, make up a cup of gravy, by following the directions on the packet. Add mushrooms and garlic.
- Serve chicken mini roasts on plate with hot mushroom and garlic gravy.
