Ingredients
- 170g of chopped dates
- 1 teaspoon of carb soda
- 60g of butter
- 170g of castor sugar
- 2 eggs
- 170g of self raising flour
- ½ teaspoon of vanilla
Method
- Grease a square cake tin or line with baking paper.
- Boil 300ml of water with the dates for about 2 minutes. Remove from heat.
- Add carb soda & stand.
- Cream butter & sugar. Add eggs and then the date mixture.
- Add flour and vanilla. Pour into tin and cook 40-50 minutes at 160'c in the oven.
- When cake is cooked place in a larger dish and pour over sauce.
Sauce
- 200 g brown sugar
- ½ cup thick cream
- 130 g butter
- ½ tsp vanilla
- Boil all ingredients together for 3 minutes.
- Put all in oven again and reheat.
