- 1 cup of chopped dates
- 1 egg , beaten
- ½ cup of chopped walnuts
- 1 ½ cups of self raising flour
- 1 level teaspoon of bi-carb soda
- pinch of salt
- 1 cup of boiling water
- 60g of butter
- 1/2-3/4 cup sugar
Method
- Put chopped nuts and dates into a large bowl, sprinkle with bi-carb soda, pour water over—allow to cool.
- Cream butter and sugar, add egg, and then sift in flour and date mixture after it's has been whipped smooth with a fork.
- Mix well and bake ½ - ¾ hour in a greased and papered log or loaf tin. (1/2 mixture in each tin) at 200c for 35mins. 180c fan forced.
