Place a lay of cooked bacon on the muffin before the spinach.
Ingredients
- english muffins or bagels
- eggs, poached, or boiled to preference
- baby Spinach
- butter
- bacon (optional)
- Hollandaise Sauce
Method
- Prepare Hollandaise Sauce.
- In a large saucepan, wilt spinach right down, in a little bit of butter.
- Poach eggs or boil eggs to your preference.
- Split english muffins (or bagels) and lightly toast, in oven on a tray or griller, to golden brown.
- Place one of the toasted muffins sides on the center of a plate.
- Top one side with enough spinach to cover the top.
- Over the spinach, top with the other side of the english muffin, upside down so middle is facing up.
- Top with two poached eggs, or if you've chosen to boil eggs, slice egg then place on top.
- Top with Hollandaise Sauce and garnish with chopped parsley.
