Variation
For savory batter, remove the vanilla sugar, essence & cinnamon.
Ingredients
- 1 cup of plain flour
- 1 cup of self raising flour
- 1 egg
- 1 1/2-2 Cups of milk (depending on batter)
- teaspoon of vanilla essence
- teaspoon of vanilla sugar
- teaspoon of cinnamon sugar
Method
- Sift flours into large mixing bowl, add all other ingredients and mix with a whisk to create volume.
- Leave batter for 10-15 minutes to thicken.
- Heat butter in a pan on high and add pancake batter. When bubbles form on surface pancake is ready to flip. Leave for 30 seconds and serve.
- Serve with whatever topping you like.
- This mix makes 6-8 medium sized pancakes.
Variation

1 1/2 cups of self raising flour
2-3 eggs
Enough milk to make batter smooth
Mix ingredients together.
Method
Allow batter to sit for 20 minutes then thin out (but not to much) with extra milk.
Drop desired amount of batter into frying pan with sufficient melted butter.
When bubbles form turn over , replenish butter every batch.
