Chicken Vol au Vents

- Pre-made Vol au Vents
- 1/2 an onion, diced
- 1 tablespoon of butter
- 1 tablespoon of cornflour
- 250mls of cream
- 1/2 cup of grated cheddar cheese
- 200g of pre-cooked shredded chicken breast
- 4 button mushrooms
- paprika
Method
- Melt butter in a hot frying pan, add onions and cook until soft.
- Turn down the heat, add cornflour, mix well.
- Slowly add cream, stirring constantly, until mix thickens. Add cheese and allow it to melt.
- Add chicken and mushroom and mix well. Add a little more cream if needed, to keep sauce at a smooth consistency.
- Slightly overfill Vol au Vents, as the mix tends to shrink after cooking in the oven. Top with a sprinkle of paprika.
- Pop in a moderate oven for 20 minutes or until golden brown.
