- 225g of butter
- 1 tablespoon of lemon juice
- 2 tablespoons of hot water
- 3 egg yolks
- pinch of salt
- pinch of cayenne pepper
Method
- Melt butter in a medium sized saucepan.
- Once melted, take off the heat.
- In a bowl, whisk yokes. Keep whisking and add lemon juice, salt and cayenne pepper.
- Slowly whisk in butter and water.
- Pour sauce into the saucepan, continue to whisk over a low heat until sauce thickens.
- Serve
